Ever since Madrid became the country’s capital, people from all over Spain traipsed into the city, bringing their traditional recipes with them. That makes it rather difficult to pinpoint one particular dish as traditionally from Madrid. There are several dishes here that should not be missed, such as the Cocido Madrileño, a stew with noodles, chickpeas, meat and vegetables, and the Callos Madrileños which is made from tripe served with blood sausage or bacon and chickpeas. Sopa de Ajo, a garlic soup is also a favourite here.
Veal and lamb are a common part of menus here, as are fish and other seafood although Madrid is not a coastal city. Fresh seafood is brought into Madrid on a daily basis and sold at the world’s second largest fish market.
During the Feria de San Isidro festival, Roscas de Santo are made and well worth trying!
